Can I arrange and modify the columns we see on the Projects tab?

Yes, after clicking on the icon you can select/unselect the columns you would like displayed. You can move the columns displayed by clicking and dragging to the order you prefer. After adjusting the columns to your preference, click on the icon and select "Save" from the drop down.
